Quick rice pudding for cheats

I’m not a big fan of rice pudding, but my kids love it. My fiance makes it really well, I don’t have the patience. So this is my cheat’s version so my kids can get rice pudding in a hurry.

I just throw come cooked white rice into a bowl and mix it with some plain yoghurt and chopped or mashed fruit (today we had banana). It’s great for breakfast, desert or baby food. Even nicer if you use handmade yoghurt. Just imagine it, you’ve cooked dinner, the kids are still hungry, and there’s loads of rice left over. Mix it into some yoghurt with fruit, and you’ve used your leftovers and made desert. I especially love it, because my son doesn’t always like to eat plain rice, but he will always eat it in a rice pudding. Go figure….

    Smart idea! I imagine if you blend this a bit quickly in something like the Magic Bullet (my “cheat” machine!) that it would be even more rice pudding-like. (I’m not a fan of rice pudding either! Give me chocolate any day of the week!!!)

    I love my Magic Bullet! I make sorbet in mine. Much more palatable than rice pudding! LOL!

    Yes Wendy, it’s nice and simple for the picky ones. And to be honest, I’m not keen on spending hours on something I don’t know a picky eater will touch!

    When you put it like that, Angie, it’s true, I forget how much sugar goes into traditional rice rudding

    I tried this on the weekend to great success! I added a little coconut milk, cinnamon and brown sugar.
